- Use 1 cup chana dal
- Take 1 teaspoon curd / yoghurt
- Take to taste Salt
- Get 1/2 teaspoon ginger paste
- Provide 1/2 teaspoon green chilli paste
- Get 1/2 teaspoon turmeric powder
- Use 1/4 cup oil
- Get 1 teaspoon eno
- Use For Tadka -
- Provide 3 tbsp oil
- Provide 2 teaspoons mustard seeds
- Take 1/2 teaspoon hing or asafoetida
- Use 2 chopped green chillies
Steps to make Vaati Dal na Khaman:
- Wash and soak chana dal for 5 to 6 hours. Grind it little coarse in a mixer and add curd and salt to it and mix very well. Cover and leave it to ferment for another 6 hours.
- Add ginger, green chilli paste, turmeric powder to the fermented batter and mix very well. Now add oil and put eno on top and mix it nicely so that the batter will become light and fluffy.
- Start heating water in the steamer. In a greased plate pour this better and let it steam for 20 to 30 minutes or until done.
- To prepare tadka, heat oil and add mustard seeds. Let it crackle. Add hing and chopped green chillies and turn off the heat. Cut prepared khaman into desired shape and pour this tadka over it.
- Khaman can be served hot or cold with fried chillies and onions.
