Steps to make Rajastani Dal-Bati-Churma:
  1. Firstly, in a large bowl take 2 cup wheat flour, ¼ tsp salt, ¼ tsp baking powder and ¼ cup ghee. - mix well making sure the dough is moist.
  2. Now add water as required and knead the dough. - pinch a small ball sized dough and roll with x impression.
  3. Place the rolled bati in grilled and grill until gets brown.
  4. Dip the bati in ghee for more soft bati from inside
  5. Churma preparation.. - - firstly, take 5-6 prepared bati and break into mixi.
  6. Make coarse powder of bati.
  7. Heat pan with 2 tbsp of ghee and roast powdered bati.
  8. Cool the mixture completely. further add 3 tbsp powdered sugar, 2 tbsp chopped almonds-cashew and ¼ tsp cardamom powder.
  9. Mix well. finally churma is ready.
  10. Rajastani dal.. - firstly in a pressure cooker take ½ cup toor Dal and ¼ cup chana dal.
  11. Pressure cook for 4 whistles adding 1 tsp ghee and 3 cup water.
  12. Now in a large kadai heat 2 tsp ghee and splutter 1 tsp mustard, 1 tsp cumin and pinch hing and all spices sauté well.
  13. Add 1 onion followed by 1 tsp ginger garlic paste and 1 green chilli. saute well.
  14. Further add 1 tomato and saute well.
  15. Furthermore add in cooked dal, 1 cup water and mix.
  16. Simmer and boil for 5 minutes or till dal absorbs masala.
  17. Now add coriander leaves and mix well.
  18. Finally, serve dal bati churma along with churma,papads,rice.
  19. To begin with, Rajasthani Khooba Roti first, in a large mixing bowl, add flour, salt, carom Seeds and water, Mix together with your hands to form crumbs. - Add water to combine it well and make a smooth and yet stiff dough.
  20. Leave the dough aside for 15 minutes so it rests. - Pinch a large lemon sized ball from the dough and roll it to make a ball. Dust the counter well and roll out the dough ball to make a thick round roti.
  21. Spread a little ghee on one side of the roti and place that side on the tawa. After 20 seconds, flip the roti and start pinching on the top of the roti.
  22. Keep pinching till the full roti is covered. Flip the roti and again roast from the patterned side. - Once both sides are lightly browned hold the roti with a tong, remove it from tawa and place it directly on flames.
  23. Flip and roast from both the sides till it's evenly cooked from both the sides. - Once done, switch off the stove and pour ghee on the roti and serve and enjoy with family.
